Savory Cornbread: One of My Favorite Healthy Muffin Recipes

I love to bake, but I'm short on time and a bit scatterbrained, so I always favor quick, easy recipes over complicated, elaborate ones. I am particularly fond of this cornmeal muffin recipe. It's adapted from a family favorite that I have been making since I was capable of stirring batter with a big wooden spoon.
Here's what it takes to make your own!
- An oven, preheated to 400
- 1 cup of cornmeal
- 1/2 cup of whole wheat flour
- 1/2 cup of all purpose flour
- 1/3 cup of sugar
- 1 teaspoon of salt
- 1 tablespoon of baking powder
- 1/3 cup canola or olive oil
- 1 cup of milk
Not a muffin man?
If you would rather enjoy this cornbread in... brick form, pour the batter into a buttered pan or casserole dish and bake at the same temperature. You might need to bake the cornbread for a bit longer, but it'll come out just as delicious!
To make the muffins...
- Stir the dry ingredients
- Add the wet ingredients and stir again
- Doll the batter into baking cups
- Bake at 400 for 30 minutes or until a toothpick or knife cam be prodded in and removed without taking batter with it

A wonderful video; what a great enhancement compared to just a written Hub. I appreciate your personal investment--as HubPages staff, now I have more of a sense of the person behind the writing. I am also a huge fan of making cornbread and corn muffins, from the Jiffy mixes to homemade with yogurt/whole wheat flour/honey. This is the first time I've seen muffins made on a cookie tray in cupcake papers, though (rather than a muffin pan...). And, yum, savory toppings for corn muffins! Thanks for your Hub!
Hiya Simone, thank you for the cornbread recipe. I fell in love with cornbread when I was in Texas but here in Toronto, I can't find cornbread mix (I'm lazy!). Your recipe and your video are great.. You seem to have all the recipes I am looking for today. In South Africa I am going to try this with what we call "mieliemeel" and I will let you know the results.

I made the muffins and they came out pretty good. I think our mieliemeel which is basically a coarse white maize meal may be a little dry and next time I will try adding a little more oil, but all in all I am pretty satisfied with the result.
