Everyone's Favorite Gluten-Free Cookie Recipe

Some recipes are universal. Take pound cake, for example. The recipe is simple, timeless, and delicious.

I've noticed that, with the rise of gluten-free foods and recipes, one recipe in particular has become universally beloved and used. It shows up all over the place online, and though there are a couple of variations here and there, it is almost always the same.

Allow me, then, to introduce (for perhaps the ten thousandth time online) perhaps the most popular (and easy) gluten free cookie recipe out there: that for the three-ingredient gluten-free peanut butter cookie.

Ingredients

  • 180 grams of peanut butter (1 cup)
  • 190 grams of sugar (1 cup)
  • 1 egg

Directions

  1. Preheat your oven to 325 degrees Fahrenheit (160 degrees Celsius)
  2. Beat the egg
  3. Add the peanut butter (I prefer crunchy and the type you have to mix. You might want to take it out of the fridge ahead of time so it isn't so stiff)
  4. Add the sugar
  5. Mix the ingredients together
  6. Place tablespoon-sized bals of the batter on a greased / silicone-pad-clad / parchment paper lined cookie sheet
  7. Add the crisscrossed fork marks (MANDATORY! Otherwise they're not proper peanut butter cookies, are they?)
  8. Bake for 8-10 minutes (they'll look gooey; just don't let them burn)
  9. EAT!

Clearly, this recipe is so popular because it's easy and simple, but the peanut butter cookies taste pretty good too (though how can one go wrong with peanut butter and sugar??).

The cookies are chewy and sweet. And they're ready in a flash. I hope you enjoy them as much as I do!

And yeah, this recipe is EVERYWHERE, randomcreative! It's definitely time to give them a try! I am by no means trying to avoid gluten, but I still make them for myself sometimes even when none of my gluten-avoiding buddies are stopping by!
